Chicken Corn Soup
3 med. potatoes, diced*
1 small onion, chopped
1/2 stem celery, chopped
2 cups water
(cook together until tender, about 20 minutes)
1-1/2 cups chopped cooked chicken
1/2 cup or more, broth or water
1 cup corn
1/2 tsp. poultry seasoning
1/2 tsp. garlic powder
1 1/4 tsp. salt
1/2 tbsp. chopped parsley, or a few dried snipped chives
Add ingredients, add enough of the liquid to make desired consistency, and heat to a good, rolling boil.
*may substitiute 1/3 lb. (2 cups) noodles for potatoes. Cook noodles 10 to 12 minutes.
Yield: 6 - 8 servings
