Crusty Garlic Bread

Ingredients
  • 2 cloves garlic, minced
  • 2 tsp olive oil
  • 2 Tbsp chopped fresh parsley
  • 2 Tbsp chopped fresh thyme
    (you may substitute 2 tsp dried thyme)
  • 2 tsp chopped fresh marjoram
    (you may substitute 3/4 tsp of dried marjoram)
  • 1/2 tsp paprika
  • 2 Tbsp grated Parmesan cheese (optional)
  • 2 small loaves (4 oz each) Italian or French Bread

  1. Preheat over to 350 degrees.
  2. In a small bowl, combine the garlic and oil - mix well.
  3. In another small bowl, combine parsley, thyme, marjoram, and paprika. Add Parmesan and mix well.
  4. Cut each loaf of bread crosswise into diagonal slices,
    (without cutting all the way through).
  5. Brush cut sides of slices with garlic oil and sprinkle herb mixture between the slices.
  6. Wrap each loaf in foil and place on baking sheet.
  7. Bake until heated through, about 10-15 minutes.

    Serve Immediately

    * Cooks Tip *
    For extra flavor, halve a clove of garlic.
    Split loaves lengthwise, rub cut sides of bread with cut sides of garlic.
    Brush with oil, sprinkle with herbs and bake.

Homemade Rolls
from the kitchen of my Grammie

Ingredients
  • 2 cakes yeast
    (or 2 pkg active dry yeast)
  • 1/2 cup sugar
  • 1 tsp salt
  • 1/2 cup shortening
  • 1 cup boiling water
  • 2 well baten eggs
  • 5 1/2 cups flour

  1. Dissolve the 2 cakes of yeast in 1 cup warm water.
    (if using dry yeast, follow directions on the package)
  2. Put sugar, shortening and salt in a large mixing bowl.
  3. Add boiling water and stir well until cool.
  4. Add yeast water, eggs and flour.  Beat well.
  5. Cover and place in refrigerator until 2 hrs. before baking.

Let dough rise for 2 hours before baking

Preheat your oven to 425 degrees.
Roll small amount of dough into a 1/2" ball.
Place 3 balls in each section of a well greased muffin tin.

Bake 12-15 minutes, or until golden brown.

Cheese Biscuits
from the kitchen of my Mama

Ingredients
  • 3-3 1/2 cups flour
  • 1/2 tsp salt
  • 3-4 Tbsp shortening
  • 3 tsp baking powder
  • 3/4 cup milk
  • 2 cups grated cheddar cheese

  1. Preheat over to 450 degrees.
  2. Mix four, salt and baking powder.
  3. Cut in shortening and cheese.
  4. Add milk and mix 'til dough follows fork around the bowl.
  5. Knead gently for 1/2 minute.
  6. Roll out dough on lightly floured surface 'til 1/2" thick, cut with round biscuit cutter that has been dipped in flour.
    (you may also use a drinking glass to cut the biscuits out)
  7. Bake 12-14 minutes.

Dilly Bread
from the kitchen of my Mama

Ingredients
  • 1 pkg dry or compressed yeast
  • 1/4 c. water
  • 1 c. creamed cottage cheese
    (heated to lukewarm)
  • 2 Tbsp sugar
  • 2 tsp dill seed
  • 1 Tbsp instant minced onion
  • 1 tsp. salt
  • 1/4 tsp baking soda
  • 1 egg (unbeaten)
  • 1 Tbsp. butter (melted)
  • 2 1/4 to 2 1/2 c. flour

  1. Dissolve yeast in warm water.
  2. Combine cottage cheese, butter, baking soda, salt, instant onions and dill seed.
  3. Add unbeaten egg and mix well.
  4. Add yeast water.
  5. Add flour to make stiff dough.
    Grease the top and let rise for 1 hour
  6. Stir down.
  7. Place in a well greased loaf pan and let rise another 40 minutes.
  8. Bake at 350 degrees for 40-45 minutes.

I know this sounds like a really strange bread,
with cottage cheese in it - but it is GREAT!
