Fruit Burritos
I got this receipe from a Mexican Restaurant - in a Danish town
makes 5-6 burittos

    Ingredients:
    • 5-6 large flour tortillas
    • 1 can pie filling (any fruit kind)
      (I prefer to use Comstock brand, and either lemon or cherry filling)
    • 1/2 c. vegetable oil
    • 1 egg white
    • powdered sugar (to sprinkle over the top)
    • whipped cream (optional)

    Directions:

    1. Lay your tortillas out flat and put a couple of large spooonfuls of the pie filling in the center.
    2. Fold the ends over the filling and then fold the sides over.
    3. Seal with egg white.
    4. Fry in hot oil until light brown.
    5. Sprinkle with powdered sugar - or - put whipped cream on top

Yogurt Pie
from the kitchen of Robbin Chapman

    Ingredients:
    • 1 16-oz. container of Cool Whip
    • 2 individual 8-oz. containers yogurt (any flavor)
    • 1 store-bought graham cracker crust (in the pan)

    Directions:

    1. If the Cool Whip is frozen - let it thaw at room temperature for about an hour.
    2. Gently mix the Cool Whip and yogurt together.
    3. Pour into the graham cracker crust
      (if you got the kind of crust that has a plastic liner over it, just turn it over your pie)
    4. Place pie in the refrigerator until it sets
    5. Garnish with whipped cream and/or fresh fruit

    This is a great, cool summer desert - easy and no hassel!

Butterfinger Cake
from the kitchen of Mary Colin

    Ingredients:
    • 1 angel food cake (homemade or store bought)
    • 16-oz. container of whipped topping
    • 1 large Butterfinger candy bar

    Directions:

    1. Break the cake into chunks and put in a 13x9x2 pan.
    2. Cover with whipped topping.
    3. Sprinkle with chopped Butterfinger bars

Pumpkin Pie Cake
from the kitchen of Ellen Kohs

    Ingredients:
    • 1 large can pumpkin
    • 1 c. sugar
    • 3 eggs
    • 1 12-oz. can evaporated milk
    • 3 tsp. pumpkin pie spice
    • 1/2 tsp. salt

    Topping:

    • 1 box yellow cake mix
    • 3/4 cup margarine
    • 3/4 cup chopped nuts

    Directions:

    1. Mix pumpkin, sugar, eggs, evaporated milk, pumpkin pie spice and salt.
    2. Pour into a well greased 9x13 dish.
    3. Sprinkle dry cake mix on top of batter.
    4. Melt margarine and pour over dry cake mix, spreading it evenly.
    5. Sprinkle chopped nuts on top.
    6. Bake at 350 degrees for 50 minutes or until set.

    Serve plain or with whipped cream

Mama's Cheesecake
from the kitchen of my Mother

    Crumb Crust:
    Mix all together and blend well -
    • 1 lg box vanilla wafers (or graham crackers)
    • 1/3 c. ground pecans
    • 2 Tbsp. brown sugar
    • 1 cube melted butter

    Cream Cheese Filling:
    Blend very well -

    • 24 oz. cream cheese
    • 1/2 pt. whipping cream (sm carton)
    • juice of 1 lemon
    • 1 1/2 tsp. vanilla

    Mix, then blend with cheese mixture

    1. 3 eggs
    2. 3/4 c. sugar
    3. dash nutmeg

    Mix Topping:

    • 1 lg. carton sour cream
    • 6 Tbsp. sugar
    • 1 1/2 tsp. vanilla
    • dash nutmeg

    Directions:

    1. Butter pans
    2. Firmly pat crumbs in pans
    3. Fill with cheese filling
    4. Bake at 375 for 20 minutes
    5. Spoon on sour cream topping
    6. Bake another 5 min at 475
    7. Cool slightly
    8. Sprinkle with crumbs and nuts
    9. Refrigerate when cool

    let stand at room temp 20-30 min before serving

Brownie Cheesecake Bars
makes 36 bars

    Ingredients:
    • 2/3 c. + 2 Tbsp. butter or margarine (divided)
    • 1-1/2 c. sugar
    • 1-1/2 c. flour
    • 2/3 cup cocoa (powdered)
    • 1/2 c. milk
    • 3 eggs
    • 3 tsp. vanilla extract (divided)
    • 1/2 tsp. baking powder
    • 1 c. chopped nuts (optional)
    • 8 oz. cream cheese (softened)
    • 1 Tbsp. cornstarch
    • 1 can (14 oz.) sweetened condensed milk (not evaporated milk)

    Directions:

    1. Heat oven to 350 degrees and grease 13x9x2-in. baking pan.
    2. Melt 2/3 cup butter.
    3. Combine melted butter, sugar, flour, cocoa, milk, 2 eggs, 2 tsp. vanilla and baking powder in large bowl.  Mix well.
    4. Stir in nuts (if desired)
    5. Spread into prepared pan.
    6. Beat cream cheese, 2 Tbsp. butter and cornstarch in small bowl until fluffy.
    7. Gradually add sweetened condensed milk, remaining egg and 1 tsp. vanilla.
    8. Beat until smooth.
    9. Pour evenly over brownie batter. Bake 35-40 minutes or until top is lightly browned.
    10. Cool in pan on wire rack
    11. Refrigerate.
    12. Cut into bars.

    Store tightly covered in refrigerator
