House Salad Dressing
from the kitchen of Cheryl Miller

        Ingredients
        • 1/2 cup oil
        • 2 Tbsp. red wine garlic vinegar
        • 1 tsp. dijon mustard
        • 1/2 tsp. salt
        • 2 cloves garlic (press in garlic press)

        Add all ingredients together.  Mix in a shaker or blender.

Creamy Waldorf Salad
6 to 8 servings

      Ingredients
      • 1 3-oz package cream cheese (softened)
      • 1 1/2 tsp. sugar
      • 1 1/2 tsp. orange juice or pineapple juice
      • 3 large apples (cubed)
      • 1 8 oz can pineapple tidbits (drained)
      • 2 Tbsp. chopped celery
      • 2 tsp. chopped pecans
      • 2 tsp. raisins
      • Leaf lettuce

      1. Combine cream cheese, sugar, and juice in a small bowl stir well, and set aside.
      2. Combine remaining ingredients except lettuce in a medium bowl.
      3. Add cream cheese mixture to apple mixture; toss gently.
      4. Cover and chill.
      5. Toss again before serving in a lettuce-lined bowl.

Artichoke and Pasta Salad
6 servings (serving size = 1 cup)
      Ingredients
      • 1 14 oz. can artichoke hearts drained and divided
      • 1 Tbsp. olive oil
      • 1 Tbsp. water
      • 1 Tbsp. lemon juice
      • 1/2 tsp. dried basil
      • 1/4 tsp. dried oregano
      • 1/4 tsp. black pepper
      • 1 clove of garlic minced
      • 3 cups cooked radiatore (about 5 ounces uncooked short coiled pasta)
      • 2 cups thinly sliced spinach
      • 1 cup chopped and seeded tomato
      • 1/4 cup (1 ounce) crumbled feta cheese

      1. Combine 2 artichoke hearts, olive oil, and the next 6 ingredients in a blender or food processor, and process until mixture is smooth.
      2. Chop the remaining artichoke hearts.
      3. Combine the chopped artichokes, pasta, spinach, and chopped tomato in a large bowl.
      4. Pour pureed artichoke mixture over pasta mixture, and toss well to coat.
      5. Cover and chill 2 hours.
      6. Sprinkle with feta cheese.

Delicious Salad
from the kitchen of Fran Goulding
      Salad Ingredients
      • 2 different kinds of lettuce
      • 1/2 red onion, sliced
      • 1/2 qt of strawberries, sliced
      • 2 or 3 kiwis, sliced
      • mandarin oranges (optional)

      Poppy Seed Dressing

      • 1/2 cup Miracle Whip Salad Dressing
      • 1/3 cup sugar
      • 2 tbsp. vinegar
      • 1/4 cup milk
      • 1 tbsp. Poppy seed

      Mix lettuce, onion, strawberries, kiwi and mandarin oranges together.  Add dressing ONLY when ready to serve, or serve it on the side allowing guests to add their own.
